Urgent: Climate Change Threatens Italy’s Burrata Cheese Supply
URGENT UPDATE: Climate change is severely impacting Italy’s iconic burrata cheese production, forcing cheesemakers to adapt rapidly to dwindling milk supplies. On a recent fall afternoon, fourth-generation cheesemaker Angelantonio Tafuno emphasized the urgent need for change. The 32-year-old cheesemaker has shifted his focus from mass-producing traditional burrata and mozzarella to crafting specialty aged cheeses that require less milk. “Doing more with less has become necessary as climate change endangers our business,” Tafuno stated.
The situation is dire. Puglia, which produces the majority of Italy’s creamy burrata, is facing a crisis as Podolica cows, known for their lower milk yield, struggle to cope with the harsh impacts of climate change. These cows, which Tafuno invested in two years ago, are now at risk of producing even less milk due to rising temperatures and water scarcity.
The latest data shows that Italy is experiencing unprecedented droughts and catastrophic fires linked to global warming. As a result, cheesemakers like Tafuno are being forced to innovate rapidly to ensure the survival of their products. “Developing cheese varieties that require less milk is a way to face what is happening now with climate change,” he explained.
