70 Years of Green Bean Casserole: A Thanksgiving Tradition
Seventy years ago, an iconic dish made its debut in the American culinary scene, forever altering Thanksgiving traditions. In December 1955, the green bean casserole first appeared in Fargo-Moorhead, introduced to households across the United States. This dish, a combination of frozen green beans, cream of mushroom soup, and fried onions, has since become a staple at Thanksgiving tables nationwide.
The origins of the green bean casserole trace back to an innovative recipe by Dorcas Reilly, a home economist at Campbell’s. Tasked with creating a dish that would resonate with the average American household, Reilly crafted the “Green Bean Bake,” which quickly evolved into the beloved casserole. The recipe first graced the pages of The Forum on December 31, 1955, as part of a New Year’s dinner suggestion, alongside traditional fare like turkey and stuffing.
From Soup to Casserole
While Campbell’s did not invent cream of mushroom soup, it played a crucial role in popularizing it. The product is rooted in the French béchamel sauce, and its condensed version emerged thanks to chemist John T. Dorrance in 1897. By the early 1950s, Campbell’s sought to boost sales and turned to Reilly for a solution. The result was a recipe that required simple, readily available ingredients, perfectly aligning with the needs of American homemakers at the time.
The green bean casserole’s simplicity and comforting flavors contributed to its rapid adoption. Campbell’s began printing the recipe on its soup cans, helping it spread across dinner tables. Today, the company estimates that the dish is served at approximately 20 million homes every Thanksgiving. This popularity is reflected in the sales data, with around half of Campbell’s yearly sales of cream of mushroom soup occurring between November and January.
A Controversial Classic
Despite its widespread acceptance, the green bean casserole is not universally adored. A 2019 survey found it ranked as the second most-hated Thanksgiving dish, trailing only canned cranberry sauce. Nevertheless, many people secretly enjoy it, revealing a complex relationship with this holiday staple.
Food writer Nancy Clanton highlights the nutritional concerns surrounding the dish. While a half-cup of green beans contains only 20 calories, the addition of cream of mushroom soup and other ingredients can elevate that figure to 227 calories. Despite these concerns, the casserole remains largely unchanged since its inception, with occasional adaptations featuring cheese or alternative ingredients.
The enduring popularity of the green bean casserole is recognized beyond the dining table. In 2002, Reilly’s original recipe was inducted into the National Inventors Hall of Fame in Akron, Ohio. Following her passing in 2018, she was honored as the “Grandmother of the Green Bean Bake,” a testament to her contribution to American food culture.
As Thanksgiving approaches each year, the green bean casserole continues to hold a special place in the hearts of many. It serves not only as a dish but also as a symbol of tradition and nostalgia, evoking memories of family gatherings and shared meals. Its presence on tables across the country is a reminder of the comfort that familiar flavors can bring, especially during the holiday season.
In a world where culinary trends come and go, the green bean casserole’s place in American culture remains steadfast.
